Live Dangerously! – IPA – 7.6% abv

Oh so comfortable, hidden out of sight. Fires still burn below the slopes of Vesuvius, faint beating hearts are becoming drums, new born kittens are growing into lions. Tear out your old tongues and make way for a mouth full of hops. Do not fear a bitter bite, believe me, the secret to fully experiencing the greatest enjoyment in life is to live dangerously and to embrace the shocked senses! Dry hopped with Galaxy, Motueka, and Strata .

Cloud Animals  – Hazy IPA  –  7%                              

I look into the sky…there are all sorts of shapes, our imaginations take us to strange places. Each cloud slowly floats across the sky, and the more I sink into the cold grass and relax, the more I finally see them – a multitude of dry-hopped animals crowd the sky! Dry hopped with Citra, Mosaic, and Simcoe.

Cosmic Colors – IPA – 5.8% abv

High above and far away from terra firma are sounds we have never heard, flavors that you have not tasted, and colors no one has seen. Someday it will all come to you like an immediate blast to the head. There are so many things in the universe that have yet to reach our senses. The colors surround us now… let them radiate in your eyes. Dry hopped with El Dorado, Strata, and Citra.

Salento – Helles – 4.7% abv

Time is fleeting – “Go go go!” – the unexplored world awaits you amigo. Onward to Colombia, once your feet hit the ground hitch a jimmy to Salento. You’ll see it all: nevados erupting, colonial streets filled with aromas of coffee and visions of Bolivar, palm trees caressing the clouds. Breathe. Remember to take it easy and take it all in as you become lost in los bosques de neblina, life will reawaken your childlike wonderment… if you allow it. This beer was designed for this adventure, easy going but with immense unexplored delights, a note of malt accompanied by restrained hoppiness.

Socrates – Barrel Aged Doppelbock – 7.3 abv%

Was he a cat or a philosopher…or is it a beer. Names take on so many different meanings, they inevitably lose all meaning. While on trial for corrupting the youth, Socrates declared, “The unexamined life is not worth living.” This doppelbock is intended to be analyzed, and force you to examine your own life. As you encounter the flavors of Tuscany from the red wine barrel where it was once held, our past vibrantly appears, it is immediate, but just as I can almost touch it, the present notes from the wine barrel and German malts transport me to the spectacular now. Keep examining your life!

Von Catenstein  Schwarzbier/Black Lager  – 5.4%

Centuries ago, in a German monastery, lived a group of sad monks. One day, they met a cool cat named Von Catenstein. Heroically, he set out to rid the monastery of the rats, and the monks became happy. To honor him, the monks brewed a lager, it was black like him, yet crisp and crushable to not weigh him down.

Chocombia  – Stout aged on cacao nibs and coffee  – 7.1%

In Colombia, according to Gabriel Garcia Marquez, priests “levitate by means of chocolate.” In Wawaka, one has yet to see such spectacles, but on the farm, a levitation of the senses transpires within the decadent immensity of dark and caramel malts aged on two of Colombia’s finest exports, cacao nibs de Santander and lightly roasted coffee from the lush volcanic region of Tolima.  

Dark Terrain – Dunkel – 5.0% abv

Shadows stretch across the field, slowly consuming the last particles of light. When your eyes can see no more and the ground finally falls out from below your feet, you must go on. Step into the darkness and rediscover it all without sight. Be guided by voices! What will you find in this dark terrain? Dark Terrain is a smooth dark lager for those that love malt forward beers, but want to enjoy more than one.

 

Can Conditioned Beers 

Que Chimba – Barrel aged guava – 6% abv

I arrived late to the party. “Que chimba,” he said as I walked through the door. What did it mean? I started to think about it as bodies passed me by and jokes floated over my head. Que chimba, que chimba, que chimba. Before I knew it, the party had ended and I missed it. As I sat down outside, a woman approached and handed me a beer. Soon enough, I forgot what I was thinking. I began to explore this complex creation. How the guava interacts with the funky characteristics of the microorganisms and the wine barrel. She smiled, and asked, “what do you think of it?” I replied, “that’s great!”

Nighttime in the WoodsDark Farmhouse Stout aged on vanilla beans and cacao

Funky things happen in the woods once the sun goes down. Everything becomes dark, but of course our wild senses adjust, and the howling ruckus ignites… Nighttime in the Woods is a mixed fermented stout that was aged for over 18 months in red wine barrels and later transferred onto vanilla beans and cacao.

Funk Creature: Galaxy – Dry-hopped Barrel Aged – 6% abv

Why tempt the gods and play with thunder and lightning? To make electricity of course! The same could be asked about mixed fermentation. Why ferment with so many different creatures and such uncertainty for months or years, when anything could go wrong? To electrify the senses of course! Funk Creature is a complex golden ale fermented for an extended period in oak red wine barrels by various microorganisms and then dry-hopped with Galaxy hops. It can be drank fresh or aged over an extended period of time to watch it transform.

Attraction  – Vinobeer (2020)- 8.2% abv

Do I dare? Our eyes meet for an instantaneous moment… was it anything more? My heart pounds louder. I’m intoxicated on this aroma, my cheeks are blushed and my lips are dark red. Stop resisting, let go for god’s sake, give in to your attraction! Attraction is a combination of two irresistible forces: mixed fermented ales aged for over a year in Sangiovese wine barrels from Italy and red wine grapes from Clearspring vineyard in Indiana. 

[Explosion Booming] – Barrel Aged Mango/Passion fruit – 5.9 abv%          

…so read the [closed captions] on the screen. A disconnect of senses. Our eyes flashed. Our ears heard nothing. Was it loud? Everything in that moment became uncanny – familiar but different. Passion fruit and mango explode on the tongue, while the once familiar booming sensation becomes altered. Altered? The boom is altered by the transformative force of mixed fermentation. If you think you know these fruits, think again… mixed fermentation always alters the mind!

Otoño Salvaje  – Barrel Aged Farmhouse Ale (Dry hopped with Citra)  6%

The innocent laughter of children begins filling school auditoriums; ghosts and ghouls creep from their summer slumber; mothers carefully dust off handed-down holiday cookbooks; and the trees not to be out-shined, radiate the American landscape with an explosion of colors. While here on the farm, it’s going to be an “otono salvaje”, a wild autumn, dry-hopped with Citra to crash the Halloween punch bowl of barrel aged complexity to celebrate the harvest of hops.

Modern Physics – Vinobeer (2019) – 8% abv

Blend of barrel aged stout and ale w/De Chaunac red wine grapes

One night as Galileo Galilei starred into the heavens, the most profound thought occurred to him while sampling the latest vintage of wine from the local vineyards of Tuscany, “Wine is sunlight, held together by water.” In our vinobeers though, which contain not only grapes, but barley, requires a more powerful force than water to hold together the cosmic rays of sunlight, yes, the force of beer! Modern Physics is a complex beast designed for aging to fully expose every last particle of sunshine, it combines our barrel aged red wine grape ale of Attraction with a Italian Sangiovese wine barrel aged stout.
